Kathryn C Eddleston

Kathryn C. Eddleston, age 67, of Homosassa, FL passed away at her residence on June 1, 2017. Kathryn was born in Savannah, GA on October 15, 1949 to Elsie (Rivers) Schaaf and the late John A. Schaaf, II. She owned and operated the Sweetwater Casino Restaurant in Sweetwater, NJ, which was named an eastern seaboard top 100 restaurant by Esquire and Gourmet magazines. Kathryn was quite the adventurer. She participated in a 2 month Rally Race across South America with her husband, was a licensed skydiver, had her pilot’s license and was a PADI master scuba instructor. Kathryn was a volunteer at the Crystal River State Park and worked with their Manatee program. She was also a lab tech and diver for Dynasty Marine and a tropical fish distributor. Kathryn was only the 2nd woman in New York history to achieve the title of Grand Excelsior for the Elk’s Lodge. She also enjoyed traveling extensively throughout her life.

Those left to mourn Kathryn’s passing are her son, Richard Charles Coleman, Jr and his fiancee’ Joanna Williams of Marathon, FL; mother, Elsie of Savannah, GA; brother, John A. Schaaf III of Savannah, GA; grandchildren: Christian Joshua Schaaf-Coleman, Skyler Jewel Coleman; nephew, Evan Schaaf; cousins: Jamie Brown of Clearwater, FL and Eric Culberson of Savannah, GA; and best friend and caregiver, David S. “Rock” Reczek. Kathryn was preceded in death by her husband of over 20 years, Daniel Eddleston and sister, Paulette Schaaf. Private cremation arrangements are under the direction of the Chas E.
