Su Jen “Penny Chen” Talbot, was born on August 19th, 1953, in Taiwan. She passed away at her home in Inverness on February 2nd, 2022 at the age of 68, after a sudden diagnosis in September of 2021 of cancer.
She was the youngest of seven children and lived in Taiwan for many years until she met Peter Talbot, when he was in Taiwan for a large engineering firm on a nuclear power project. She married Peter after he had returned to Massachusetts on March 13th, 2005. They lived in Salem, Massachusetts until October 2018 when they moved to their home in Inverness.
Penny was preceded in death by her two sisters. Along with her beloved husband, Peter, those left to cherish her memory are her step-children, Beth Gasinowski (Edju) of Danvers, Massachusetts, Alison Talbot of Portland, Oregon, and Craig Talbot (Alicia) of Basalt, Colorado; her two sisters and two brothers; her three beloved grandchildren, Max, Owen, and Ella and her many nieces and nephews, in Taiwan.
Penny enjoyed living in Salem where she had many Sunday or Chinese New Year dinners for Beth’s family and friends. All three of hers and Peter’s grandchildren loved her homemade fried rice and pepper steak. She especially enjoyed weekly dance lessons where she and Peter became good friends with some of the other couples in attendance, including Dave and Julie who had recently moved to the Villages during the winter months.
She will also be remembered and missed by her best friend and next door neighbor, Jack, who has been a frequent visitor for dinner as well as showing Penny and Peter many of the tourist locations, festivals, and restaurants around the area.
Penny recently also became good friends with a couple she met through one of her friends, that lives in Spring Hill – her friend is from Taiwan as well and grew up in a town next to where Penny grew up. She referred to this dear friend as her “Guardian Angel” because of how much help and assistance that her new friend always provided.
Penny looked forward every year to when she and Peter would return to Taiwan to be with her family and the many friends they both had there. To much of their dismay, this was unfortunately interrupted when Peter had a knee replacement and the following year when the COVID 19 Pandemic began. Peter will be taking her remains to Massachusetts where she will be buried in their family plot at Puritan Lawn Memorial Park Cemetery in Peabody, MA. A short service will be held at the cemetery prior to burial.
Penny was clearly loved by many, and her warm and friendly smile and laughter will be missed by so many. Her dance teacher said “she was a sweet and funny lady who was full of life with a lot of energy. We love you Penny and hope you are dancing in heaven.”
A Celebration of Life for Penny will be held on Wednesday, February 16, 2022 at 10:30 AM at Joy and Praise Fellowship Church at 6670 N. Lecanto Highway, Beverly Hills, FL, with Pastor Ed Padgett officiating. A gathering of family and friends will begin at 10:00 AM until the hour of service. In lieu of flowers, the family requests memorial donations are made to the Shriners Hospital for Children, Tampa, FL.
