Virginia Marie (nee Soffe) Collins, 55 years old was born on a snowy December 30, 1959 at Roslyn Park Hospital, Roslyn Long Island to Marlene and Al Soffe. She left us on a hot, sunny June 19, 2015 in Inverness, FL.
Ginger, as she was known by all, grew up on Huntington, L.I. and graduated from Holy Family High School in 1977. She also graduated from Barbizon School of Modeling, but at 5’2″, decided modeling was not for her! She then went to work for the New York Telephone Company in the business office as a representative.
After marrying and divorcing, she moved to Florida to be closer to her parents. Ginger loved music and dancing and watching “Face The Nation” every Sunday morning. A gourmet cook until her illness took her out of the kitchen, she watched all cooking shows, often calling her God-Mother, Barbara Terranova saying “I’ve got a great easy recipe for you.” She tried to teach her long term companion, Tom, a meat and potato guy to cook, and she said that he was getting better, but for her standards not quite there, but she loved him anyway!
Ginger is survived by the love of her life, Thomas Musto, her caretaker for the past three years of her life. She is also survived by her parents, Marlene and Al Soffe, her three children Christa, Sara and Jesse Collins and many loving aunts, uncles and cousins on Long Island and in Florida. She was preceded in death on her 50th birthday by her beloved cousin Joseph Hart. She was also preceded by her grandparents, Helen and Jack Soffe, Bertha and John May, as well as many other friends and relatives.
A memorial service for our beautiful blue-eyed baby girl will be held on Tuesday, June 30, 2015 at 3:00 PM at Chas. E. Davis Funeral Home with Crematory.
